The countdown is ON and we've set our closing date for final construction to Saturday, February 22nd at 9pm! Only 24 days remain before we close this chapter and bid farewell to our dear old Birchwood—the Birchwood who has nurtured us all these many years and whose time has come to grow!
Much of the initial construction phase is complete. Right outside our current dining room's south facing wall is our soon to be sun-filled Community Room (pictured below):
While this harsh winter and Polar Vortex have caused some delays, our contractor has done their best to keep our project moving on schedule. The exterior of our addition is nearly finished with concrete walls, windows, and a solar-ready roof! We've marked off the space for our new walk-in cooler and at almost three times the size of our current capacity, we can hardly wait for those first farmers' deliveries to fill it up when we reopen come Spring.
I know many of you (myself included!) are wondering where you'll get your Good Real Food fix while we are closed. Rest assured we won’t let you go without Birchwood food entirely! Starting on Saturday, March 1st, you can find us serving a breakfast pop-up menu at Verdant Tea in Minneapolis. From 8am to Noon, seven days a week, we’ll join our friends at Verdant to offer a selection of favorite Birchwood breakfast items (including the Savory Waffle!) as well as a unique, collaborative menu designed by Chef Marshall Paulsen and Verdant's Tea Master David Duckler. As always, whenever Verdant's open, you can find Birchwood Cafe pastries on the menu, too!
Yes friends, the countdown to closing time is here. These days I find myself swinging from states of tearful nostalgia, heartfelt gratitude, giddy excitement, and plain old fashioned fear for the rapidly approaching transformation that lies ahead. Yet what keeps me coming back to center is knowing that our wonderful community is cheering us on—eager, excited, and hungry for Birchwood 2.0!
