We source local, sustainable, organic and fair trade ingredients to lovingly handcraft a variety of vegan, vegetarian and non-vegetarian dishes. We take care to know the land, the animals and the people we work with are treated with care & respect.

Birchwood Cafe — good real food for everyone.

At the Birchwood, we celebrate 8 seasons: Spring, Summer, Scorch, Autumn, Dusk, Frost, Winter, and Thaw. We don't take our cues from the calendar, rather we look to our farmer friends, and in the colder months their root cellars, to guide and inspire our creativity in the kitchen.

Thaw marks the end of Winter and the beginning of a new growing season. (Spring is just around the corner!)

Each day, the sun rises a little earlier and burns just a little warmer, as snow flurries (and March "blizzards") come and go. Patience eludes us: we're grateful for frozen vegetables, and for fruit flown in from far-off shores, but we long to eat fresh berries straight from the vine and pick herbs right from our gardens.

Happily, we have local & organic eggs a-plenty, and the crew in our kitchen, led by Chef Marshall Paulsen, are continually creative with our store crops, pickles, preserves, and the frozen bounty from the last growing season. Thanks to their efforts, there's still plenty of local goodness in store for you on our Thaw Menu!
