At the Birchwood, we celebrate 8 seasons: Winter, Thaw, Spring, Summer, Scorch, Autumn, Dusk, and Frost. We don't take our cues from the calendar, rather we look to our farmer friends, their fields, and during these colder months, their root cellars, to guide and inspire our menu creation.
