At the Birchwood, we celebrate 8 seasons: Spring, Summer, Scorch, Autumn, Dusk, Frost, Winter, and Thaw. We don't take our cues from the calendar, rather we look to our farmer friends, and in the colder months their root cellars, to guide and inspire our creativity in the kitchen.
Smack dab at the height of summer and the peak of flavor is SCORCH, our season of super sweet corn, plump purple eggplant, fragrant basil, cilantro and rosemary filling our kitchen with their gorgeous green perfume and of course, those juicy, flavorful sun-ripe tomatoes, rolling out of the garden and right onto your plate!
