At the Birchwood, we celebrate 8 seasons: Winter, Thaw, Spring, Summer, Scorch, Autumn, Dusk, and Frost. We don't take our cues from the calendar, rather we look to our farmer friends, and in the colder months their root cellars, to guide and inspire our creativity in the kitchen.
